COOK TIME: 35–45 minutes
SERVES: 4–6
Ingredients:
☐ 6 bell peppers (tops cut off, seeds removed)
☐ 1 lb ground beef (or sausage)
☐ 1 cup cooked rice
☐ 1 cup shredded Tri-State Cheese (Co-Jack, Twisted Swiss, or Muenster)
☐ 1 small onion, diced
☐ 2 cloves garlic, minced
☐ 1 can (14–15 oz) diced tomatoes, drained
☐ 1 tsp salt
☐ ½ tsp pepper
☐ 1 tsp Italian seasoning
Serve with:
Extra Tri-State Cheese, sour cream, or fresh herbs
Instructions:
- Preheat oven to 375°F
- Cook beef in a skillet until browned; drain excess grease
- Add onion and garlic; cook until softened
- Stir in cooked rice, tomatoes, seasoning, salt, and pepper
- Remove from heat and mix in half the Tri-State Cheese
- Stuff mixture into peppers and place upright in baking dish
- Cover with foil and bake for 25–30 minutes
- Remove foil, top with remaining Tri-State Cheese
- Bake uncovered another 10–15 minutes until cheese is melted and peppers are tender
